Honey’s colour comes almost entirely from the floral source the bees fed on — specifically, the minerals and antioxidant compounds present in that flower’s nectar. Lighter honeys like acacia come from nectar low in these compounds, while darker honeys like buckwheat or mustard come from nectar naturally richer in them. Colour has nothing to do with added dyes, ripeness, or one honey being “better” than another — it’s simply a fingerprint of where the bees were working.

Every season, without fail, someone asks me some version of the same question after ordering two different jars from us: “Why is my mustard honey so much darker than the multiflora honey one? Did something happen to it?” It’s a completely reasonable thing to wonder, especially if you grew up on one uniform, pale golden honey from a supermarket shelf and assumed that was just what honey looked like. Once you start working with single-origin honey the way we do, the colour range becomes one of the more interesting things about the product — and it’s telling you something real.

What Actually Determines Honey’s Colour

The short version: it’s the flower, not the bee, not the processing, and not the season on its own (though season plays a supporting role).

When bees collect nectar, they’re also picking up trace amounts of minerals, pollen compounds, and antioxidants specific to that plant. Some flowers — acacia and clover, for instance — produce nectar that’s naturally low in these compounds, which is why honey from them comes out pale, almost water-white. Other flowers, like buckwheat or mustard, produce nectar carrying more mineral content and stronger phenolic compounds, and that honey comes out dark, sometimes nearly the colour of molasses.

This is why single-origin honey — honey made predominantly from one flower type in one season — shows real, consistent colour differences from jar to jar depending on what it’s made from, while blended commercial honey tends to look the same across every bottle, because it’s mixed specifically to standardize colour and flavor.

The Official Colour Grading Scale

This isn’t just something beekeepers eyeball. Honey is actually graded on a standardized colour scale developed by the USDA, called the Pfund scale, which measures how much light passes through a honey sample. It runs from:

  • Water White — nearly clear (e.g., acacia)
  • Extra White
  • White
  • Extra Light Amber
  • Light Amber
  • Amber
  • Dark Amber — deep, almost opaque (e.g., buckwheat, mustard)

This scale exists purely to describe colour for grading and labeling purposes — it isn’t a quality ranking. A Water White honey and a Dark Amber honey can both be equally pure, equally raw, and equally good; they’re just different products with different flavor intensities.

Does Darker Honey Mean More Nutrients?

This is a genuinely common assumption, and there’s a kernel of truth in it — but it’s easy to overstate. Research has generally found that darker honeys do tend to carry higher concentrations of antioxidants and minerals than very light honeys, largely because the same plant compounds responsible for the darker pigment often correlate with higher phenolic content.

That said, this is a general tendency, not a strict rule you can rely on jar to jar. A given batch of dark honey isn’t guaranteed to outperform a given batch of light honey on every nutritional measure, and floral source affects flavor and aroma at least as much as it affects any nutrient profile. I’d steer people away from picking honey by colour alone as a health strategy — pick it based on the flavor and floral source you actually enjoy, and trust that raw, unprocessed honey of any colour is bringing real trace nutrients along with it.

Why Rantrove’s Honey Varies in Colour Between Batches

Because we keep our honey single-origin and don’t blend batches to force a uniform look, you’ll notice real colour variation across our range — and even some subtle variation within the same variety across different seasons. Our Ajwain honey, for example, sits solidly in the amber range with its characteristic warm, aromatic depth, while our Wild Honey tends toward a lighter, rounder amber depending on what was blooming that harvest.

This is intentional, not an inconsistency to apologize for. If every jar looked identical regardless of season or source, that would actually be a sign of blending or standardization — the opposite of what raw, single-origin honey is supposed to deliver.

Does Honey Colour Change Over Time in the Jar?

Yes, and this is a separate phenomenon worth knowing about so it doesn’t cause confusion. Honey naturally darkens slightly over time due to a slow chemical reaction between its sugars and amino acids (a form of the Maillard reaction, the same basic chemistry behind browning in baked bread). This is gradual, harmless, and doesn’t affect safety — it’s simply honey aging normally, similar to how crystallization is a separate normal aging behavior. Heat exposure and prolonged storage both speed this gradual darkening up.

This is different from the floral-source colour differences discussed above — that’s the honey’s baseline colour from harvest, while this slow darkening is a secondary effect of time and storage conditions on top of that baseline.

Frequently Asked Questions

Is lighter honey always milder and darker honey always stronger-tasting?

Generally yes, this correlation holds fairly well — lighter honeys like acacia tend to have delicate, mild flavors, while darker honeys like buckwheat or mustard tend to be bolder and more robust. It’s not an absolute rule, but it’s a reliable general pattern across most floral sources.

Can honey colour tell you if it’s fake or adulterated?

Not reliably on its own. Adulterated honey (cut with sugar syrups) can be manufactured in almost any colour, so colour alone isn’t a purity test. Genuine purity indicators come from lab testing, transparent sourcing, and trusted labeling — not visual colour checks.

Why does my honey look darker than it did when I first bought it?

This is most likely natural gradual darkening from storage over time (a slow sugar-amino acid reaction), which is harmless. It’s unrelated to the original floral-source colour and doesn’t indicate spoilage.

Is white or “water white” honey missing nutrients compared to darker honey?

Not missing — typically just lower in certain mineral and antioxidant concentrations, since those correlate loosely with pigment. Water white honeys still carry their own trace nutrients; they’re simply from a different floral source with a different natural profile.
